This coffee is a washed process, which leads to a great balance of sweetness and acidity in the cup.
When brewing the coffee does release bergamot aromas, like a classic washed Ethiopian, but as you drink it you’ll notice the flavour of ripe, juicy nectarine is front and centre. There is still a tea-like quality to the coffee, which when combined with the aroma, does still evoke a cup of Earl Grey tea.
The floral, violet aromas carry into the cup, even changing into something like blueberry as the coffee cools; we recommend letting this coffee cool to around 55C-60C before diving in, as that’s when the flavours really open up and it’s just sunshine in a cup!
