This Natural Ethiopian is one of 4 we have sourced from the Chelichele Washing Station in Yirgacheffe, showcasing how processing unlocks different flavours within a single coffee. For this Natural processed coffee the cherries are left whole to dry and ferment in the open air; once dried the fruit is removed to leave only the seed. This technique adds  body, sweetness, and some boozy fruit flavours.
