This year's Christmas coffee feels that little bit extra special as we're now roasting ourselves, 2020 has been quite the year for everyone! We were hit with so many setbacks when setting up the Established Roastery, but our mantra has been, "let's just make sure we can get our coffee on the shelves for Christmas." And here we are! When we were searching for the right coffee, this one really stood out with it's round-chocolatey body, studded with notes of mandarin & clementine and a dried fruit sweetness that reminds us of dried cranberries.
Tangara is a coffee grown by 6 female producers. It's a washed coffee, with a little bit of a difference. Once the coffee is harvested, each farmer is doing an in-cherry fermentation phase. This specifics of this phase will vary, depending on equipment available but it is this that has led to such an interesting cup. Once de-pulped, the coffee is then submerged and washed one more time before being dried on raised beds. We're really thankful to have been able to work with Langdon Coffee Merchants and the Cedro Alto Coffee Farmers Collective who've been able to provide this extra information and the transparency to know that the producers are getting paid a fair price for their coffee.
