This coffee is a perfect example of the coffees we love to source for our green labelled bags - something that tastes great across the spectrum of brewing methods whilst balancing approachable flavours with layers of complexity that can be uncovered.

This coffee is a great example of the skill of Costa Rican producers - 'classic' processing methods can produce an exceptional cup of coffee with bags of character. It's approachable with a round  sweet fudge-like base allowing the fruitier notes to be prevalent but not overbearing. When hotter the malic acidity is more evident, with lots of baked apple notes, then the coffee cools to reveal slightly darker, fuller fruit notes like black cherry. A coffee that is enjoyable to both 'daily drinkers' and enthusiasts alike!

The Aquiares estate was founded in 1890, and now has a thriving local community of 1,800 people across 924 hectares. Aquiares became the first farm in Costa Rica to fulfil the requirements of the Rainforest Alliance Climate Module, and their emissions are tracked to certify that they do not meaningfully contribute to climate change. 

Additionally, Aquiares is the basis of an ongoing study between the CIRAD Institute of France and the CATIE University of Costa Rica – the “Carbon-Flux” project measures greenhouse gas exchange between the farm plot and the atmosphere. This research can eventually be used by any coffee farmer in the world to estimate the carbon sequestration potential of their farm.
