For this Carbonic Maceration process the cherries are sealed into stainless steel tanks before CO2 is added. The different fermentation caused produces new flavours within the coffee. This technique adds lots of big and bold flavours, heaps of funkiness whilst retaining the brightness intrinsic to an Ethiopian coffee - it's a unique experience!
