This coffee comes from Forest Coffee, a partnership from Shady and Elias Bayter at El Vergel. With innovations in processing, particularly in Colombia, to produce cleaner and more unique coffees Forest Coffee partners up with small farmers in Huila and Tolima to encourage them to try new methods of producing their beautiful coffees. This coffee is known as Pink Borbon Creation, this is the second year we have had this coffee.
In terms of the semi-washed process, the team at Forest share: Say hello to our Pink Bourbon, where the fermentation game is strong! We kick things off with a 24-hour pre-fermentation in cherry, giving those beans a head start on flavour fun. Then, buckle up for a 36-hour aerobic fermentation fiesta in bags, all snug in their mucilage blankets. Finally, we let them bask in the sun's glory on raised beds for about 15 days. It's like a tropical vacation for your taste buds – sun-soaked and bursting with flavour!
The variety: Once upon a time in the lush hills of Huila, Colombia, there was a special coffee variety known as Pink Bourbon. Legend has it that this unique bean, with its distinctive pink hue, was born from a fortuitous cross between the Red and Yellow Bourbon varieties. Blessed with rich volcanic soil and a perfect altitude, Huila proved to be the ideal playground for this vibrant coffee to thrive. The Pink Bourbon quickly captured the hearts of local farmers with its exceptional cup profile, boasting flavours of sweet caramel, delicate florals, and a hint of tropical fruitiness. Its ability to withstand the region's diverse microclimates and adapt to varying altitudes made it a darling among growers in Huila, who lovingly tended to their coffee plants, nurturing them with care and dedication. Today, the Pink Bourbon continues to flourish in Huila, a testament to the harmonious marriage between nature's gifts and the labour of passionate coffee cultivators.
Forest Coffee are right at the forefront of pioneering new processing methods to increase the potential quality, and therefore pricing, of coffees throughout Colombia. We have purchased coffees from Forest that are experimental and geared towards competition, but we’re genuinely more excited to see these advanced processing techniques employed with more regular lots – this is vital in the longevity of coffee as a sustainable crop for producers and is part of a wider effort within growing countries.
