Established Coffee: Food Project #1 | Palimpsest
(5-Course 'Tasting Menu' Brunch with Drinks)
Join us on Saturday 1st July at 12pm, in the first of a number of food-based projects at Established Coffee. Taking ideas which inform the menu in the cafe, each project having its own distinct theme.
Food Project #1 is a collaboration from Phillip McCrilly and Jane Peaker, which considers the need for sustainable, resourceful food practice. Taking its name from the act of material reuse, Palimpsest, brings together local seasonal produce that has been reconfigured, reconsidered and repurposed over a five course tasting menu.
Elements in the menu include:

Rhubarb Shrub Soda
Fermented Tomato + Celery Salt Bloody Mary
'Spro + Elderflower Tonic
Gooseberry + Barley Water
Malted Cortado Milkshake
*This can be made with a vegetarian alternative to fish/meat, but is not suitable for vegans.
Please advise us of any dietary requirements or allergies in advance. We do our best to adapt our dishes to accommodate dietary needs & restrictions, however items may be exposed to traces of allergens during preparation.
Some courses will be paired with drinks from the Established menu and other refreshments (still/sparkling water) are included with the meal. The meal will be served in our First Floor Training Room, which is adjacent to our cafe on Hill Street.
