An exceptional washed coffee from Colombia, from a farm that is owned and operated by Edier Perdomo. Edier has owned this farm for 23 years, having grown up in a family of coffee growers.
We had a mixed Bourbon lot (Pink, Red & Striped) last year and it was really tasty, showcasing Edier's attention to detail and this year's coffee is even more special.
This lot is Pink Bourbon, which is presents as heaps of sweetness alongside fruit notes that would be more common in a Kenyan Coffee than a Colombian!
Edier's post-harvest processing is second to none, with an immaculate and intentionally well-appointed wet mill and drying facility, which results in a clean cup and a coffee that is rich, with a clean finish.
In the cup the fruitiness is raspberry and blackcurrant, with lots of great mouthfeel and acidity to give balance. The coffee is rounded with milk chocolate notes, which combine with the berry notes to make the coffee feel more decadent and structured.
