An incredible coffee showcasing this innovative processing method pioneered by Shady & Elias Bayter. The Koji is a fungus (Asperigillus Oryzae) common in Japan, and used to ferment rice which is used across many food products. To create the unique fermentation in this coffee the team at Vergel Estate reproduced the Koji in rice, ground it and then spread it across the whole coffee cherries. Leaving the coffee cherries in temperature controlled silos to ferment the Koji breaks starch down into sugars not accessible through normal fermentation processes.
This, coupled with the intrinsic characteristics of the Java varietal, produces a hugely sweet, intensely fruity and wonderfully bright cup of coffee.
Pineapple is a big player in the flavour profile, with a good helping of phosphoric acidity coupled to the increased sweetness from the processing, to be reminiscent of pineapple jam. The effervescent acidity and big sweetness, as the coffee cools, was akin to a San Pellegrino Blood Orange, almost sherbet-like.
This is an exceptional coffee, showcasing the frontiers of coffee processing being explored by producers like the Bayters.
