Finca Cruz Loma totals 350 hectares with coffee making up less than 2% of the total output; they produce and export many other fruits and vegetables.
Grace and her family grow several varieties, including the Caturra variety in this lot, but it is in processing that Grace Morales’ coffees really stand out, choosing processes to enhance and elevate different varieties.
This coffee is a long fermentation process that ramps up both the fruity characteristics and the mouthfeel of this Caturra micro-lot. The blackcurrant quality in this coffee is sweet and full, not so much bright and acidic, and is backed up by lots of plum jam. This sweetness becomes jammy and sticky due to the full-bodied mouthfeel of the brewed coffee. Brewing this coffee through a paper filter reduces the body slightly and makes the pear-like aftertaste more obvious, but it also works well when brewed in a French Press or Aeropress as they showcase the sweetness in its fullest form.
