This is a coffee which stood out to us on the cupping table for its sweetness and crisp green apple acidity. It reminded us of apple turnovers and granola bars.

La Cordillera (which translates to 'the summit' in english) is produced bt 45 small-scale coffee growers, situated in Diplito, Mozonte and Jalapa. The area is a nature reserve with a wide biodiversity of flora and fauna, located close to the border of Honduras. This region is known as the capital of specialty coffee in Nicaragua, owing to the conditions created by the wide biodiversity, high elevations, fertile soils and varying microclimates. 

The importers for this coffee, Caravela, have been working with small scale growers in this area since 2010, having installed a cupping lab in Octal. This has enabled them to be close to the producers and help them produce better quality coffees.
