This coffee was used by our Roastery Manager, David, in the finals of the 2022 Irish Brewers Cup competition, placing 3rd overall (but personally we think the coffee should have won, it’s that good!).
It’s a very special varietal, Pink Bourbon, and an innovative processing technique, called Double Natural Anaerobic, created and executed with skill by Rafael Amaya and his team in Colombia.
David’s recommendations to get the best out of the coffee are to brew at a slightly lower temperature than you would normally and try to brew slightly faster too. This will bring better balance to this incredibly sweet coffee, and showcase the complexity found in the varietal and processing method.
