"The Mierisch family obtained their seed stock for this coffee from the natural regression of Yellow Pacamara trees in their nursery over the years. The Pacamara varietal, which is a cross between a Pacas and Maragogype, is still a genetically unstable variety. This means that around 10 to 12% of the Pacamara trees regress back to either Pacas or Maragogype.

The plot located in San Jose where this coffee originates from was planted in 2015. Pacas is not as common in Nicaragua, with producers favouring its cousin, Bourbon, or its derivatives such as Red Catuai and Caturra.

Where we feel Yellow Pacas truly differs from the Red Catuai though, is in the cup profile. It’s reminiscent of the honey, herbs and spices found in a traditional hot toddy with a jammy, pineapple-like acidity and long, caramel finish."
