In the magical mountains of the Tablón de Gómez municipality, located on a trail of off-road terrain about 3 hours from the nearest paved road towards Buesaco, there is a group of coffee growers who have been growing coffee all their lives have mastered the art of the honey process.

Forest Coffee, the importer who sourced this coffee for us, have developed a project with over 40 coffee producers, which follows a simple process of 48-hour fermentation of the whole coffee cherries, followed by their unique sun-drying method for the honey.

This project mainly involves Caturra, Colombia and Castillo varieties, with this lot being 100% Caturra. They produce and dry all the coffee, which is then meticulously blended and stabilised together in Buesaco for 30 days before milling the dried parchment ready for shipping.

When brewing this coffee expect a clean and crisp cup - the flavours are honeydew melon and white grape across the whole tasting, from hot to cool.

When brewing as a filter the tartaric acidity is most prevalent, which gives a lot of white wine characteristics - the effervescent acidity can present when extractions are faster and is reminiscent of white grape Shloer!
