Staying in the area of Minas Gerais, this new go-to Brazil is from a farm called Fazenda Irmãs Pereira, which translates to Pereira Sisters Farm. The Pereira sisters, Maria Valeria & Maria Rogéria, took over the family farm following their father's retirement in 1996, renaming the farm to honour their commitment to each other and the production of quality coffee on the land.
“Our greatest pride is unity as sisters and our main challenge is to keep our pioneering spirit up to date. This is what makes our coffee stand out in the market. That is what makes the difference. If we stay on the edge of innovations, we will always be one step ahead and in a strong position” - Maria Rogéria.
The red bourbon varietal and natural process lends to a sweet and silky bodied cup. We get notes of cocoa and bakers chocolate, with a soft praline, nougat and caramel which is a reminiscent of a Mars bar, with dried fruit notes of fig and date. A great choice as a go-to espresso and an easy drinking coffee on filter.
The natural processing begins with the selection of ripe coffee cherries, the ripeness is measured using a Brix level check; this evaluates the sugar content in the cherries. Harvesting is done by hand to ensure only the best cherries are picked. Once harvested, the cherries are washed to remove any dirt or dust before being passed through a density sorter known as a ‘lavador’ in Brazil, which separates cherries that aren’t a the right stage of ripeness. The cherries are then laid out on patios or suspended beds for 2-4 weeks of drying where the natural sugars from the still in tact pulp ferments and imparts its flavours on the seeds inside.
