Jose Herman Salazar is a coffee producer in southern Huila, Colombia, growing coffee on Finca La Guaca in Pitalito. Originally from Nariño, he moved in search of new opportunities, beginning with small plantings that gradually evolved into specialty coffee. Alongside his family—each playing a key role—he has developed the farm with a strong sense of unity, passing down knowledge and purpose through their shared work.

Today, the Salazar family focuses on careful processing and quality-driven practices, with a particular commitment to varieties like Pink Bourbon and Bourbon Aji.

Through continuous learning and teamwork, they remain dedicated to refining their coffees and showcasing the unique potential of their region.

In 2021, one of José's Ají lots entered the Colombia Cup of Excellence — a national competition drawing over 1,000 submissions, assessed a minimum of five times each before the international jury stage with Jose's coffee placing 6th. The auction lot subsequently sold at $20.60/lb to some of the most respected specialty buyers in the world, including Onyx Coffee Lab, Passenger Coffee, Black & White Coffee, and the green coffee Caravela who sourced this pink bourbon lot. 

This Pink Bourbon has so much of the bright and fruity characteristics we've come to love about the variety, but with the specific flavours we've been finding are a little different to others we've roasted. Lighter and brighter notes like pear and white grape carry lots of sweetness and acidity whilst the clean, lingering aftertaste has reminded us of a Kenyan black tea.
