All of these steps come together to give us a coffee that has all the warming seasonal notes of cinnamon, massive amounts of sweetness and round full mouthfeel. Unsurprisingly, given the coffee's given name, and the process it went through, there are a few cinnamon-based flavour references in the cup. Curiously cinnamon/cinnamon grahams/cinnamon toast crunch (whichever name you know it by) was the first thing to jump out at us, so naturally this is a coffee that pairs well with milk and flat whites from it are reminiscent of the milk left at the end of a bowl of the cereal! A recurring note when tasting the coffee has been horchata, with the sweetness and depth of cinnamon being evocative of a traditional tiger nut based horchata. Once you've acclimatised to the waves of cinnamon there's a rounded malic acidity, which makes the coffee taste more and more like an apple crumble as it cools.
This is coffee that showcases the years of experiments and experience of Jairo and his team at Santa Monica, and is definitely a coffee that once tasted will not easily be forgotten!
